Prep: 5 mins
Cook: 10 mins
Serves: 2

Equipment Needed

  • Kettle or pot
  • Sharp knife
  • Cutting board
  • Citrus juicer (optional)
  • Measuring spoons
  • Strainer
  • Mug

Ingredients

  • 2-inch piece of fresh ginger
  • 1 whole lemon
  • 2 tablespoons raw honey
  • 2 cups water

Instructions

  1. Peel and thinly slice the ginger. Squeeze the juice from one lemon.
  2. Bring water to a boil and add the sliced ginger. Simmer for 10 minutes.
  3. Remove from heat, strain into your mug, add lemon juice and honey while still hot (but not boiling).
  4. Stir well until honey dissolves completely. Taste and adjust sweetness if needed.

Customization Tips

  • Add a pinch of turmeric for extra immune support
  • Include a cinnamon stick while simmering
  • Try adding a few mint leaves for freshness
  • Make it iced by cooling and serving over ice

Precaution Tips

  • Don’t add honey to boiling hot tea – wait until it’s warm to preserve honey’s benefits
  • Use organic lemons if possible, especially if using the peel
  • Start with less honey and adjust to taste
  • If you have acid reflux, reduce the amount of lemon
